Barley Arugula Salad with Lemon Tahini Dressing

Do you feel like the summer has just flown by so far? I do my best to soak up each day but I feel like it was just May and now August is almost here! We have busy with all things work, house and baby prep but it’s all so wonderful. I haven’t had as much time to focus on preparing recipes, which isn’t my favorite because most times, I would rather be in the kitchen than doing anything else.

We have made some great progress on the house renovations so hopefully soon we will be starting on the KITCHEN! I can not wait! I’ve been cooking in the 1960’s kitchen and will be so thrilled to have a space that represents me and I feel great in. In the meantime, I’ve been making quick summer recipes that are filled with farmer’s market produce. I have been thinking about salads a lot recently so this week I was inspired to make this Barley and Arugula Salad which turned out to be so good. It’s super simple and can be made ahead of time but packs in flavor.

Barley Arugula Salad with Lemon Tahini Dressing

Ingredients

  • 1 cup barley, uncooked
  • 2 cups arugula, packed
  • ½ red onion minced
  • Dressing
  • ¼ cup tahini
  • ¼ cup water
  • juice of 1 lemon
  • 1 tsp liquid aminos
  • a dash of smoked paprika
  • salt and pepper to taste

Instructions

  1. Cook the barley according to package instructions. In the mean time prepare the dressing by combining all ingredients. Whisk well and set aside, it will thicken up as it sits.
  2. Allow the barley to cool and once cool, combine arugula, barley and red onion. Drizzle with as much dressing as you like and serve. Can be store in refrigerator for later.
