Beet Donuts with Coconut Cream Glaze

So, Valentine’s Day is just a few days away and if you haven’t made plans to celebrate the day of love, you should! Even if you just celebrate by making fun, beautiful, tasty goodies in the kitchen. If you didn’t know already, February is heart health month. Beets are one of the most heart healthy foods on the planet, so why not put them in donuts.

When baking with beets, you must know that they will turn everything red but sadly, the color usually bakes out. Also, beets add a good amount of moisture to your recipe and make things extra tasty. If you’re afraid of beets or think you don’t like them, try baking with them. I think you will change your mind.

Serves 6

1 cup spelt flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup almond milk
1/3 cup raw sugar or coconut sugar
3 tbsp coconut oil
1/2 cup grated beet
Coconut Cream Glaze
1 small can coconut cream
2 tbsp raw sugar
3 tbsp almond milk


Preheat oven to 350 degrees F. Grease donut pan and set aside.

In a large mixing bowl, mix together flour, baking powder, baking soda, and salt.

In a small bowl, mix together almond milk, sugar, coconut oil, and vanilla.

Add the wet ingredients into the dry and mix well, until incorporated. Fold in the grated beets.

Spoon the mixture into the donut pan, trying not to cover up the center piece.

Cook for 17-20 minutes or until inserted toothpick comes out clean. Allow to cool for 10 minutes.

Coconut Cream Glaze

Using a mixer, mix all ingredients on high speed until light and fluffy.
Once the donuts are cool, dip top half into glaze and allow to dry on cooling rack.
