It must have something to do with fact that the weather has been incredible this week, but I have been craving nothing but smoothies: green ones, purple ones, pink ones, and blue ones! I’ve been a smoothie- drinking machine! When the weather warms up, I think of delicious salads, pretty smoothies, and flavorful popsicles. So, get ready to see lots of pictures of all of these things because the time is coming; and coming fast.
The trees have started to bud, the breeze is getting warmer, and the grass is getting greener. I just realized today that daylight savings time starts this weekend and that means the days will get longer. Isn’t that what we have been waiting for since the last time change? YES! With longer days ahead, I am excited to get out and enjoy nature again. I don’t know about you but I certainly get cabin fever during the winter. Last week, we went hiking and it was so refreshing.
Speaking of refreshing, let’s get back to the smoothies! I’ve had a couple of friends ask me recently about how I keep my protein high without eating meat. Do I have a favorite protein powder? I sure do. I’ve tried a lot of them on the market but so many of them (even some plant protein powders) seem to have so many extra ingredients that I just don’t love them. Others are simple on ingredients but just don’t taste nice. My go-to protein powder is hemp protein. You can buy it at Whole Foods in just pure powder form, no added ingredients or flavors. In this smoothie, I use hemp protein powder and it tastes purely delicious.
Makes 1 16oz smoothie
1/2 cup unsweetened coconut milk
2 cups frozen mixed berries
1/4 cup frozen banana pieces
1 scoop hemp protein powder
1 tbsp chia seeds
1 tbsp ground flax seeds
Blend all ingredients in a blender until thick and creamy. If the blender has some trouble, add just a bit more coconut milk, 1 tbsp at a time. Serve in a glass and top with blueberries and hemp seeds.
