Blueberry Almond Butter Nice Cream

The past fifteen days of my life have been completely new, different and busy. We closed on a house that we intend to renovate and every day since has brought on new adventure. While trying to be as cost effectiveas possible, we have been putting a lot of energy into sourcing materials and supplies at reasonable prices. We’ve driven from place to place, reseller to reseller and have put in long hours of work. I know this is just the beginning but in fifteen days, we have already learned a lot.

It’s funny how, just like that, life can change so much. Two weeks ago we went about our days as normal: worked all day, had dinner and then found some leisure activity to entertain our evening. Now, every extra second is filled with house projects. Painting walls has become the new norm and leisure time has taken on a whole new meaning. So far, I have enjoyed it. Wiley loves doing the calculating, measuring, building and creating and watching his joy is exciting. When this is over, we will look back and know that with our hard work, we made a house a home.

Fall is quickly approaching (I really can’t believe it) so I’m trying to squeeze in all of my favorite summer recipes before it’s time to put pumpkin spice in everything. Ice cream is a staple in our house during the summer but sometimes I just don’t have the time to go through the steps to making it. Enter: this blueberry nice cream. It takes about 5 minutes of prep time and you will have a rich, creamy ice cream that is unbeatable. If time is short, this recipe is for you!

I’ve added Amazing Grass Beauty Elixir to this ice cream. This is an optional step but certainly helps boost your nutrient intake. I’ll share about elixirs and adaptogens later, but for now, enjoy some ice cream.

Blueberry Almond Butter Nice Cream

Ingredients

  • 4 bananas sliced and frozen
  • 1 cup frozen blueberries
  • 1 tbsp ground flax seed
  • 1 tbsp almond butter
  • 1 tbsp Amazing Grass Beauty Elixir
  • optional: granola topping

Instructions

  1. In a food processor, blend frozen bananas until smooth and creamy. The mixture should be thick and resemble soft-serve ice cream.
  2. Add blueberries, elixir and flax seed. Combine until creamy. Pour into a loaf pan or any freezer-safe container and freeze for about an hour. Scoop and serve immediately. Optional: top with granola.
