I grew up eating my grandma’s homemade chocolate pudding. She served it warm and it was delightful. The first time my, now husband, had it when we were dating he thought it was the weirdest thing because it was warm. I’m not sure if it’s a common thing or not to serve homemade chocolate pudding warm but I thought it was great.
Since the way I used to eat and the way I eat now are completely different, I strive to re-create some of my favorite recipes in a way that is much more nutritious. Chia seeds are a superfood that are nutrient dense and make a great, healthy pudding. Once they soak in liquid, they become gel-like creating a very similar texture to my grandma’s pudding. Recent research has found that the chia seed benefits are even greater than we realized. Benefits include promoting healthy skin, reducing signs of aging, supporting the heart and digestive system, building stronger bones and muscles and more. Now they have even been linked to healing diabetes.
This pudding is one of my favorite desserts and can be made many different ways. I added fresh peaches but any type of berries or even chocolate would go great with this. If you are vegan, you can substitute the honey for maple syrup. I hope you enjoy it as much as I do!
