It’s beginning to look a lot like Christmas! Currently, I’m in the backseat of the car listening to Christmas songs en route to Washington DC. This year, we decided to go somewhere for a little vacation and can’t wait to see all of the holiday beauty! I hope your Christmas season has been great so far.
Since we are traveling, I had to do all of my holiday baking last week. I wasn’t able to make tons of guilt free goodies, like I usually do but I did have time to make these little bites.
Do you have any favorite holiday cooking traditions? I grew up doing all kinds of baking. Probably, no surprise to you, powdered sugar was the main ingredient! My mom and I would make sugar cookies and decorate them with loads of sprinkles, glitter, and color. Then, throughout the next 8 days all 5 dozen of them would be consumed and everyone around would be on a sugar high.
Anyhow, these chocolate bites are way lighter on sugar but still full of flavor. You can really top them with anything you want, so get creative! Merry Christmas to you.
Ingredients
- 1 10oz bag of semi-sweet or dark chocolate chips
- ¼ cup fresh pomegranate seeds
- ¼ cup finely chopped pecans
Instructions
- In a double boiler, melt the entire bag of chocolate chips. I use a small Pyrex bowl over a small pot with about ½ cup of water.
- Using a non-stick pan or a pan covered with wax paper, pour tablespoons full of melted chocolate onto the surface. Spread around, making a small circle with the back of the spoon.
- Sprinkle with pomegranate seeds and pecans and allow to cool.
- It will take about 1 to 2 hours for them to completely harden and are ready to serve.
