Chocolate Protein Pancakes

My goodness! The past four days have been absolutely beautiful! I’m sitting at my desk right now just watching the sun beam through all of the windows and it is so refreshing. I needed a little boost and this spring-like weather is doing the trick. This past weekend Wiley and I traveled home to North Carolina to be a part of a long time friend’s wedding. We love going home for so many reasons but the main thing that calls us home is the water. I’ve told you this before but I’ll tell you again, there is no place like home, especially if home is by the ocean. We didn’t get to stay long this time so we tried to make the most of the three days that we were there.

I was a part of the bridal party for this wedding and I’m sure you know that the wedding day is an all day event. The bride and other bridesmaids and I got ready at the most beautiful bed and breakfast in the coastal town of Washington, NC. It’s about 15 minutes outside of our hometown and is quite picturesque. I took the opportunity to walk around and explore for about thirty minutes prior to all of the festivities. The streets are lined with white picket fences, leading up mostly white houses that are well-appointed with large front porches perfect for rocking chairs, cool breezes, and sweet tea.

If you are searching for a place to go where days are long and life is slow, call me, I know the perfect spot! When we go home we are reminded that this place is special. There is charm and character flowing through the streets that is unmatched. No matter where I go, I will always have this small town running through me with the fondest memories.

 

For the meantime, we should probably move on to pancakes. These are packed with nutrients with a touch of sweetness- perfect for breakfast or dessert! Chocolate Protein Pancakes

Ingredients

  • 1-cup brown rice flour
  • 2 tbsp coconut sugar or maple syrup
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ½ scoop Amazing Grass Chocolate Peanut Butter Protein Superfood
  • 2 tbsp cacao powder
  • 1 1/4 cup unsweetened almond milk
  • 1 flax egg or regular egg if not vegan
  • 1 tbsp coconut oil
  • ½ tsp vanilla extract

Instructions

  1. Heat skillet to medium high heat and melt 1 tsp of coconut oil.
  2. In a large bowl, mix together rice flour, sweetener, baking powder, salt, protein, cacao and cinnamon.
  3. In a separate bowl mix the almond milk, egg, oil, and vanilla.
  4. Combine in large bowl and allow to sit for five minutes while heating skillet.
  5. Once warm, pour ¼ cup of batter onto the skillet and cook until bubbles appear, then flip. Cook on opposite side for about 3-5 minutes.
  6. Repeat this until you have finished all of the batter.
