Coconut Yogurt Snack Bowl

In attempt to cleanse our bodies, reduce bloat, and start fresh Wiley and I are eliminating all grains and added sugars from our diet for at least two weeks. We started on July 31st so I will keep you updated on the goings-on. I don’t think there is anything wrong with eating grains daily but do believe they can cause some digestive issues and are directly related to bloating because they aren’t so easy for our bodies to digest. I’ve never completely eliminated these food groups before so I’m excited to see how I react. In general, I don’t crave sweets but when taking out all sugars, except that in fruit, I’ve found that to be a bit more tough.

Since I am constantly trying to overcome my infertility, I have been doing some research and have found that my body most likely needs more good fats and less carbohydrates. This is probably my main reason for doing this elimination diet. My thought is that by adding more fat and reducing the carbs, my body will use these fats to regulate my hormones. When a diet is not high in fat, a woman’s body has trouble balancing estrogen, which is needed for conception.

So far, I’ve found that snack time is most difficult. A lot of times I will have coconut sugar granola with some fruit for a snack so I’ve found a new way to make this snack possible. This Coconut Yogurt Bowl is full of all kinds of good fats and is completely grain and sugar free (except for the fruit sugar). I don’t know about you but I like having something crunchy in between meals so this snack is perfect for that.  You have the option to add honey or maple syrup for a little bit of sweetness but I think it’s great with or without it. Load in all the superfoods you like and enjoy this nutrient-rich bowl!

  • If I am taking this bowl to-go, I will eliminate the yogurt so it doesn’t have to be kept cold.

Coconut Yogurt Snack Bowl

Ingredients

  • ½ cup unsweetened coconut yogurt
  • large handful of strawberries, sliced
  • 1 tbsp. almond butter
  • 1 tsp chia seeds
  • 1 tsp cacao nibs
  • ¼ cup coconut flakes
  • 1 tbsp. honey (optional)

Instructions

  1. First, you will need to toast the coconut. You can do this either on the stove or in the oven. I prefer to toast it on the stove when using a small amount like this. Preheat your burner to low heat, add the coconut flakes to a pan and toast for about 5-7 minutes, shaking it occasionally to turn the coconut. It is finished when the flakes are slightly golden.
  2. In a bowl, combine all other ingredients and top with cooled coconut. Mix together and enjoy!
