Matcha Latte

Today is the first day of spring and I’m so excited about it. It has been the most perfect first day- 75 degrees, bright sunshine, and a bit of a breeze. I may have told you before but because Wiley and I live in a house that is not large on square footage, my “office” is in our bedroom (my second office is the kitchen). I have a little antique desk in the corner of the room right beside a window that faces our backyard. As I’m typing I’m listening to the birds sing and our two chickens, Rosemary and Lavender are pecking the ground hunting for anything they can find. Speaking of the chickens, they will be a year old this week! We got them last year for Easter when they were two days old. I never knew that I could love a chicken but I have grown so fond of those two girls and watching them explore is so fun. Anyhow, my little desk is one of my favorite places in the house because I can open the window and feel like I’m surrounded by all of the outside beauty but still get work done.

Several weeks ago a tea company called Tea Pigs sent me some products to try and I have just loved using with them. Tea Pigs is a company passionate about providing the best quality teas to their customers, they love what they do and it shows. In the package was a couple of different matcha tea products. I have used matcha in recipes but had not ever really made my own drink with it, so I started experimenting. I’m certainly no pro at it but this Matcha Latte with coconut milk and a dash of cinnamon taste pretty good!

Matcha Latte

Ingredients

  • 1/4 cup hot water
  • 1 cup warm coconut milk
  • 1 teaspoon matcha powder
  • 2 teaspoons raw honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  1. Pour matcha powder into a mug then pour in hot water. Whisk until well combined. There should be no lumps. I use an electric whisk but if you have the pretty wooden ones you will need to whisk it for several minutes.
  2. Next pour in honey, vanilla, and cinnamon. Whisk again.
  3. Pour the warm coconut milk into the mug and froth it. Again, I use my electric whisk but you can just as easily use a wooden whisk.
  4. Drink warm or serve over ice for an iced latte.
