Peanut Butter Energy Balls

One of the most common questions that I get is: “what are some simple, healthy snack recipes?”. That’s a tough one because it’s a bit of a challenge to create just that, something that’s simple and healthy but easily portable for snacking. These energy balls are a definite go-to when it comes to snacking and the recipe couldn’t be easier to prepare.

I love taking these on road trips (I’m going on one tomorrow, in fact) and just having them in the car when I’m out and about for the day. The recipe is really versatile too. You can switch up the nut butter and use almond, cashew, or whatever your favorite is and always add more superfoods like hemp seeds and flax seeds. I use honey in this recipe but if you don’t eat honey, I have a feeling agave would work just the same.

Peanut Butter Energy Balls

Ingredients

  • 2 cups rolled oats
  • ½ cup peanut butter (you may need a little extra)
  • ½ cup honey
  • ¼ cup chia seeds
  • ½ teaspoon salt
  • a pinch of cinnamon
  • ½ cup chocolate chunks (or chips)

Instructions

  1. Pour all ingredients into a food processor. Pulse until mixture begins to incorporate. I like mine to be a bit chunkier but if you prefer them to be smoother, keep pulsing. Once well combined, use a small ice cream scoop to help form small balls. Press mixture together in your palm and set in a sealed container. Refrigerate for about 2 hours and serve. They can be left at room temperature after refrigeration.
