Rich Hot Chocolate

I’m not a coffee drinker, never have been. I remember the first time I tasted coffee and I was really not a fan. I was sitting on my preschool teacher’s lap while she was drinking coffee and I asked her if I could taste it, I took one sip and that is the taste I would forever know as coffee. I realize that I was 5 years old at the time and my taste buds have changed (and that most 5 year olds don’t drink coffee) but I’ve just never been a fan.

But something I have always loved is hot chocolate! If you’ve been following along, you probably know that I don’t love sweets but a good cup of rich, dark hot chocolate is always a holiday/ winter favorite. Sometimes, I feel like drinks, more than food brings back memories. Hot chocolate reminds me of my mom, because she adores chocolate. It reminds me of driving around our hometown looking at Christmas lights. That in its self is enough to make anyone’s heart warm and fuzzy.
It’s been slightly cloudy the past two days, which makes it seem colder so I got
up this morning and made a pretty darn good cup of cocoa.

Rich Hot Chocolate

Ingredients

  • 2 cups unsweetened almond milk
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup coconut sugar
  • 1 tsp cinnamon
  • Optional: coconut whipped cream
  • 1 can coconut cream
  • 3 tablespoons powdered sugar.

Instructions

  1. In a small saucepan, warm almond milk over medium heat.
  2. Once warm, add in sugar, cocoa powder and cinnamon. Allow to cook for about ten minutes.
  3. To make the coconut cream: with an electric beater or in the bowl of your stand mixer, whip air into cream and sugar until light and fluffy.
  4. Serve warm and top with whipped coconut cream for extra richness.
