The first day of spring was yesterday and I must say, I’m quite excited to be saying goodbye to winter. I feel like I’ve been cooped up for far too long and am excited to start living outside! Easter is just a week away so I’m brainstorming ideas for Easter lunch. I love bright, flavorful foods this time of year and crave things like tangy lemons, fresh salads and iced tea.
The past few weeks have been full around here. We are making some real progress on the house (I’m so excited about that), are nearing the end of IVF treatment, and attempting to complete some big work projects. I’m really looking forward to all the things that a new season will bring. In addition to warmer temperatures and lots of beautiful blooms, we will start on our kitchen renovations soon and I’m hoping to grow A Happy Healthy Heart by starting on my first cookbook! Isn’t it so exciting to have fun things to look forward to?! This morning we went to Home Depot for our daily visit and bought a few trees for the front yard landscaping and as soon as we put them against the house, we both felt a sense of “oh, this is becoming a real home” which feels amazing.
Anyway, lets get back to food. I was inspired to make this Roasted Asparagus dish with Coconut Bacon (I’ll tell you all about that in a second) and let me tell you, it makes a wonderful combination. Coconut Bacon is basically just toasted coconut that is flavored to mimic bacon. I love the crunch and texture of it and think it’s such a compliment to a lot of dishes. Here’s how you make it:
