Life has been busy recently so I haven’t had a ton of time to plan, prep and cook meals for my family. I’m always on the hunt for something that is healthy, quick and involves little clean up. I recently discovered these fish fillets from Gortons Seafood and they are so tasty! These beer battered, whole fish fillets are the perfect easy meal.
I cooked them on a sheet pan with Maple Roasted Sweet Potatoes, topped them with some fresh herbs and had a super tasty meal in less than 25 minutes. I feel good about feeding these fish fillets to my family because they are wild caught, non minced fillets that have no extra additives.
Summer meals are meant to be simple and delicious, so toss these ingredients on a sheet pan, put it in the oven and enjoy summer made simple!
Ingredients
- 4 sweet potatoes, cut into wedges
- 1 tbsp maple syrup
- 2 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt and pepper to taste
- 1 bag Gortons Beer Battered Fish Fillets
- Parsley and lime to garnish
Instructions
- Preheat oven to 425 degrees F. In a large bowl toss together sweet potato wedges, maple syrup, oil, paprika, garlic powder, salt and pepper. Spread in a single layer on a large baking pan.
- Place Gorton’s Fish Fillets on the pan and cook for 20-25 minutes or until potatoes are brown.
- Serve warm with fresh parsley and lime.
