Smoky Cauliflower Steaks

I have just been loving the weather recently. The days are warmer and longer and mother nature is speaking my language. I may have mentioned before that my husband and I hosting a retirement party for my mom at the end of the month but I’m excited about it. She absolutely deserves to take a rest after 35 + years of busting her booty as a nurse.

It’s so interesting to recognize the different phases of life we go through. At my age, everyone is either super excited about getting married, or having children but how exciting is it be retiring? I mean, that is a life long goal accomplished! My mom still lives in my hometown of Greenville, NC but is hoping to move to Nashville sometime in the future, which I would love. I’m an only child, and she is a single mom so it just makes sense for us to be closer together. Anyway, I’m excited to celebrate her soon.

 

Smoky Cauliflower Steaks with Honey Glazed Cashews

Smoky Cauliflower Steaks with Honey Glazed Cashews

Ingredients

  • 1 head cauliflower
  • ½ tbsp. liquid aminos
  • 1 tbsp. curry powder
  • ¼ tbsp. cumin
  • ½ tbsp. smoked paprika
  • 1 tbsp. salt
  • ½ tbsp. black pepper
  • 2 tbsp. olive oil
  • Honey Glazed Cashews
  • ½ cup cashew pieces
  • 2 tbsp honey
  • pinch of salt

Instructions

  1. Once the cauliflower has been rinsed and dried, slice into “steaks” by placing the bottom of the cauliflower on the cutting board. You will take the knife all the way through the vegetable from top to bottom. You should get about four steaks.
  2. Heat 1 tbsp olive oil in a medium pan over medium high heat. Preheat oven to 400 degrees F.
  3. In a small bowl, combine all spices including salt and pepper.
  4. Drizzle each slice, on both sides, with 1 tbsp of olive oil. Rub the combined spices on each side of the steaks, dividing it evenly between all of them.
  5. Place steaks into heated pan, allowing to sear on both sides for about 5 minutes. Once seared, remove from burner and place in oven for an addition 8 minutes. Remove from oven and serve warm.
  6. Honey Glazed Cashews
  7. Heat small pan over medium heat. Add cashews, honey, and salt. Stir until cashews are coated. Cook for about 5 minutes or until cashews are slightly brown. Serve on top of cauliflower steaks.
