Strawberry Kiwi Popsicles

I think you’re really going to like this one! Do you remember eating the little popsicle tubes out of the plastic when you were younger? You know what I’m talking about, right? I don’t remember what they are called but it’s basically sugar water made into all of your favorite flavors poured into a plastic tube. Those were so good. Well, I hate to break it to you, but there is nothing good for you in those (sadly). But these Strawberry Kiwi Popsicles are filled with nutrients and taste so delicious. These were also featured in the Vegan Life magazine spread.

The best thing about popsicles is you can make any flavor that suits your fancy, pour it into the mold, wait a few hours, and voila, the perfect summer treat!

I shared these with my in-laws when they were in town recently, and my father-in-law says “these are just like the ones out of the box.” And, coming from him, that is such a compliment, so, I’ll take it. I use coconut cream to help make these a little bit more creamy rather than icy but you can substitute for any non-dairy milk of choice. I hope you love them as much as I do!

 

Strawberry Kiwi Popsicles

Serving Size: 8 popsicles

Strawberry Kiwi Popsicles

Ingredients

  • 4 Cups Frozen Strawberries (Thawed)
  • 1 Cup Coconut Cream
  • 2 Kiwis
  • 2 Tablespoons Raw Sugar

Instructions

  1. 1. In the bowl of a stand mixer fitted with the whisk attachment, combine refrigerated coconut cream and raw sugar. Mix for about one minute on high or until air has incorporated and the mixture has thickened.
  2. 2. Pour strawberries, coconut cream, and 1 skinned kiwi into blender and combine. Blend until smooth.
  3. 3. Slice kiwi and place one slice into each mold. Pour strawberry mixture into mold and insert Popsicle sticks.
  4. 4. Freeze overnight. To remove popsicles from mold run under lukewarm water for 30 seconds.
  5. 5. Enjoy immediately!
