Sweet Potato Kale and Red Lentil Soup

Happy February!  When I looked at my calendar today I saw that this month is already filling up quickly! I always try to remember that, even though life can get crazy busy, it should not be hurried. If I do things in a quick, hasty manner, then I’m not completing them the way that I should. This goes for all aspects of life. My relationships with my friends, my workouts, or my job should never be hurried because that means that I’m not doing them whole-heartedly. I don’t mind being busy, but I don’t want to go through each day with a “hurry up and get this done” mentality.

One of my favorite ways to slow down and ensure that, while still busy, I can keep a calm and assertive mental state is to take about thirty minutes a day to do something that really makes me happy. For me that is cooking, spending time outside, working out or taking a bath. When I’m doing these things, I can put all other stressors aside and focus in on relaxing my mind. I have found this to be super helpful, especially since I am my own boss and I feel like I need to constantly be “doing”.

A little over a month ago, I found myself feeling completely overwhelmed with life and once I stepped back and analyzed the situation, I found that I was letting the weight of everyday life take over. When you’re trying to reach a goal, it is so easy to get caught up in every single detail but I’ve realized that it’s not necessary to let those tasks be all consuming. So my new routine of giving myself at least thirty minutes every single day to put away my computer, stop worrying about whatever it is that’s weighing on me that day and really do what makes me happy has helped in more ways than one.

99% of the time if I am in the kitchen cooking (not cleaning, I leave that to Wiley) then I am so happy. Making this soup is one of the first recipes I fell in love with. I am instantly happy as soon as I start the prep work. I combine a bunch of nutrients with a few spices and out comes the best meal! Every single ingredient in this recipe can offer your body some good so if you need to escape for a bit, give it a try!

Sweet Potato Kale and Red Lentil Soup

Sweet Potato Kale and Red Lentil Soup


  • 2 medium sweet potatoes, cubed
  • 4 kale stalks, de-ribbed and chopped
  • 1 sweet onion, chopped
  • 3 garlic cloves, minced
  • 1 cup red lentils
  • 1 32 oz container vegetable broth
  • 1 tsp cinnamon
  • 1 tbsp curry powder
  • 1 tsp nutmeg
  • 1 tsp cayenne pepper
  • ½ tbsp black pepper
  • ½ tbsp pink salt
  • 1 tbsp olive oil


  1. In a dutch oven or soup pot, heat olive oil on medium/ high. Add onions and cook for about 3-5 minutes or until transparent.
  2. Toss in garlic and cubed sweet potatoes. Stir until ingredients are incorporated and allow to cook for 5 minutes. Sprinkle all seasonings over sweet potato mixture and stir.
  3. Pour in vegetable broth and bring to a boil. Once boiling, stir and reduce to simmer. Pour in lentils. Cover and cook for about 20 minutes, stirring occasionally.
  4. Remove lid, and add in kale. Cook for an additional 5 minutes until kale has wilted a bit but not lost its vibrant color. Remove from heat and serve warm.
