Watermelon Cucumber Mint Salad

This summer has been crazy good and I don’t want it to end any time soon! Kids in Nashville are already going back to school but it’s only the first week of August. I heard this sweet little story on the radio today that brought me to tears so I thought I should share it with you. The narrator of the story was a little boy who was going off to school for the very first time. He was reading a letter he had written for his mom. He began by saying how excited he was for the first day of school and he couldn’t wait to tell her what he was going to learn that day. He then encourages her to be brave while he is away at school, he knew that she would miss him. He goes on and on about how he loves her and in between the tears, I was thinking how great it must feel to know that you have raised a child who is able to speak these words and encourage his mother. It was super sweet! I probably didn’t do the story much justice but I loved it and really appreciated all the things it could have meant for so many people. Lord help me on the day that I have to drop my baby off for the first day of school! You might as well have 8 pounds of tissues ready.

Anyway, we still have several weeks of summer left so why not live it up?! I made this super quick and easy Watermelon Cucumber and Mint Salad over the weekend and I keep craving it. It’s super hydrating and refreshing, and not to mention, so good for you! I hope you’ll enjoy it.

Watermelon Cucumber Mint Salad

Ingredients

  • ½ mini melon, cut into chunks
  • 1 large cucumber, cut into chunks,
  • 1 lime, juiced
  • ½ tbsp. sea salt
  • 1 tbsp honey
  • a handful of chopped mint

Instructions

  1. In a large bowl combine all ingredients and toss until salt, lime juice, and honey have covered the salad. Serve chilled.
